Smoked spare ribs

Ingredients

  • 2 racks of pork spare ribs
  • 1/4th cup of light brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons salt
  • 2 teaspoons dry mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • barbecue sauce as required

The first step to any pork rib recipe is to get rid of the thin membrane on top of the ribs. This membrane does not soften when cooked and prevents the flavours of the seasoning from penetrating the meat. Prepare your seasoning rub by combining sugar, chili powder, cumin, salt, mustard, garlic powder, onion powder, white pepper, and cayenne pepper in a small bowl. Make sure that your ribs are dry by patting them with paper towels. Next, coat the ribs on both sides, feel free to use your hands to completely cover the meat with seasoning. Let the meat rest for a few hours before you move to the next step. We recommend using a smoker for the next step, allowing the meat to be smoked at 107°C for 5 hours or about 1 hour more than the number of pounds of meat. Keep the coals smoldering at low heat so that the ribs don’t burn or overcook. Check the ribs periodically to make sure that they aren’t drying out. Flip and move the ribs 90° every hour to get crosshatch sear marks across the flesh. The meat is done when it is tender and releases easily from the bone.

Honey garlic spare ribs

Ingredients

  • 4 pounds pork spare ribs
  • 1/4th teaspoon freshly ground black pepper
  • 1/4th teaspoon salt
  • 1/4th teaspoon garlic powder
  • 1/2 cup honey
  • 3 tablespoons apple cider vinegar
  • 1/4 cup soy sauce
  • 3 cloves garlic

Preheat an oven to 165°C. Line a large baking pan or roasting pan with foil. Once the silvery membrane on top of the ribs has been removed, cut them into 1-rib pieces. Season these single spare ribs with salt, garlic powder, and pepper. Arrange the ribs in the baking pan and cover it with foil. Place the ribs in the preheated oven for one hour, or until they are tender. Remove the ribs from the oven and drain off any excess fat and liquids. In a small saucepan combine the honey, vinegar, soy sauce, and garlic and bring to boil. Once this mixture has been prepared use a brush to coat or drizzle the honey and sauce mixture over the spare ribs. Continue baking the ribs for another 30 minutes without covering the top. Serve hot along with the accompaniments of your choice.
