The Thanksgiving Leftover Sandwich

Ingredients:

1/4 chopped small red onion salt and pepper 1 cup shredded cabbage 1 tbsp. white wine vinegar 2 tsp. olive oil 1 tbsp. chopped dill pickles 1 tsp. whole grain mustard 2 slices white bread 1/3 lb. sliced turkey 1 tsp. cranberry sauce

The perfect combination of all the best bits of a Thanksgiving dinner, this sandwich is as wholesome, flavourful and food-coma-inducing as the meal itself! Toss the red onion and pinch of salt in a small bowl to coat, and let it sit for 5 minutes to allow the onion to soften slightly. Rinse under cold water, and place the onion in a medium bowl and add cabbage, vinegar, and olive oil, add salt and pepper and toss until coated. In a small bowl, whisk together pickles and mustard. Spread the mixture on one slice of bread, and top with sliced turkey and a dollop of cranberry sauce. Add cabbage slaw to your sandwich and serve!

Turkey Pot Pie

Ingredients:

2 cups Leftover Gravy 1 teaspoon Poultry Seasoning 1 1/2 cup milk 1 cup water 2 tablespoons butter 3 cups cubed cooked turkey 2 cups frozen mixed vegetables 1 refrigerated pie crust

This crowd-pleaser is a rich, wholesome solution to your leftover woes. Not the turkey type? Switch up the recipe to include leftover chicken breast instead! To prepare your pot pie, preheat your oven to 218°C. Mix your gravy, poultry seasoning, milk, water and butter in large skillet or saucepan, and bring to boil on medium heat, stirring frequently. Next, stir in the turkey and vegetables and return to boil. Reduce heat to low and simmer for 5 minutes, before spooning into a 9-inch deep-dish pie plate or 2-quart baking dish, and top with pie crust. Seal the edges and cut several slits on top to allow the hot air to escape, and bake for 30 minutes or until the crust is golden brown. Let stand 5 minutes, and your leftover pot pie is ready to serve!

Cinnamon Sugar Cookies

Ingredients:

2 tablespoons sugar 1 teaspoon ground cinnamon 8 ounces pie dough scraps 2 tablespoons melted butter

The perfect segue into wintertime festivities, this quick and easy recipe makes use of leftover pie dough and is a treat fit for all ages. To make your very own cookies, preheat your oven to 177°C, and line a baking sheet with parchment or a silicone baking mat. Combine the sugar and cinnamon in a small bowl, and roll the dough scraps into a ball and roll until it is 1/4 inch thick. Next, brush on the melted butter and sprinkle with cinnamon sugar. Cut the dough into shapes of your choosing, and transfer to the prepared baking sheet. Bake until golden for about 12 minutes and you are ready to go!
