3 Slow Cooker Meal Recipes for Those Busy Mornings

Updated: Oct 12, 2022

Everybody loves a good meal, but the process of preparing it can often be too big of an ask for most. Whether you’re a stay-at-home parent, a working professional, or a college student, it’s likely that you often find yourself without the time, or the willingness to treat yourself to a lavish home-cooked meal. While cereal-breakfasts and frozen raw burger meat meals are enough to tide you over through your day, they don’t really come close to the satisfaction of a hot meal.

Cooking doesn’t have to be a difficult process, and the key to your meal-prep dreams may lay hidden in your very own kitchen cabinet. The Slow-Cooker is a multi-faceted, all-in-one cooking appliance that is your one-stop solution to preparing delicious meals, with very little effort. Check out some of these easy slow-cooker recipes that are perfect for those busy mornings, when meal prep is the last thing on your mind.

Scrambled Eggs

Ingredients:

  • 4 slices bacon

  • ½ package (8 oz) sliced fresh mushrooms (1 ½ cups)

  • 3 tablespoons margarine or butter

  • 8 eggs

  • 1 cup half-and-half or milk

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • ½ can (10 3/4 oz) condensed cream of mushroom soup

  • 1 tablespoons chopped fresh chives

  • 2 Italian plum tomatoes, quartered, sliced

  • 1 cup shredded Cheddar cheese (8 oz)

Crisp up that bacon and tenderise your mushrooms in a skillet, stirring frequently. Set the mushrooms and bacon aside. Beat the eggs in a large bowl and add salt and pepper to taste. Add them to a skillet, cooking over medium heat until the eggs are firm but still moist. Stir in the soup and chives. Place the prepared half of the eggs in your slow cooker, and top with half each of the cooked mushrooms, tomatoes, cheese and crumbled bacon. Repeat layers with eggs and the bacon and mushroom mixture. Once done, you’ve got a ready-to-eat meal of scrambled eggs, perfect for breakfast, lunch, dinner and everything in between!

Lemon Garlic Chicken

Ingredients:

  • 1 teaspoon dried oregano

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 2 pounds skinless, boneless chicken breast halves

  • 2 tablespoons butter

  • ¼ cup water

  • 3 tablespoons fresh lemon juice

  • 2 cloves garlic, minced

  • 1 teaspoon chicken bouillon granules

  • 1 teaspoon chopped fresh parsley

Mix the oregano, salt, and pepper and rub the mixture onto your chicken breast. Brown the chicken in butter for 3-5 minutes on each side, and then place chicken in a slow cooker. Mix the water, lemon juice, garlic, and bouillon, and bring the mixture to boil. Pour over the chicken in the slow cooker. Seal the lid and cook on low heat for 6 hours. Add parsley 15 to 30 minutes before the end of the cook time, and you’ve got a healthy, scrumptious meal to soothe your appetite.

Honey Ginger Apple Shredded Pork

Ingredients:

  • 2lb pork shoulder roast

  • 1 yellow onion, sliced

  • 2 apples, cored and sliced

  • 2/3 cup beef or chicken broth OR water

  • 1 tablespoon raw honey

  • 2 tablespoons freshly grated ginger (use ground ginger if you don't have fresh on hand)

  • 1 teaspoon cinnamon

  • 1 teaspoon salt

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon pepper

  • 2 garlic cloves, peeled and smashed

  • 1 bay leaf

Once you have cut up and divided your ingredients this is the easiest recipe on the list. Pull out your slow-cooker and add broth or water, then onions, pork, apples, followed by honey, spices, garlic clove and bay leaf. Cover and cook for 8-10 hours on low. Once the pork is tender, shred it with tongs or a fork.
