  • 4 lamb loin chops

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon butter

Greek Lamb Chops

Ingredients:

  • 1/4 cup olive oil

  • Juice of 1 lemon (about 1/4 cup lemon juice)

  • 2 tsp dried oregano, or 1/2 cup chopped fresh

  • 4 cloves garlic minced

  • 1 tsp salt

  • 1/2 tsp ground black pepper

  • 8 lamb chops

  • 1 tbsp olive oil for cooking

Directions:

Pat dry the chops with paper towels, and discard any shards or bone fragments. Mix all of the ingredients together in a small bowl. Lay your chops out in a large baking dish or on a large plate, and pour the marinade all over the lamb, massaging it into the meat. Cover with plastic wrap and marinate for a minimum of half an hour. For better flavour, marinate overnight in the refrigerator, turning the chops over from time to time, and let them return to room temperature for 20 minutes before cooking. Heat oil over high heat until it begins to smoke. Fry or grill your lamb in batches for 3-4 minutes on each side, depending on thickness, until done to your liking. (3 minutes per side for medium, and 4 minutes for medium-well.) Let the meat rest for 5 minutes before serving, sprinkled with lemon juice and oregano.
