Basic Chicken Marinade

Ingredients:

1 cup yoghurt Saffron 1 Tbsp Fenugreek Ginger and garlic (Juiced) Seasonings to taste

Pork Marinade

Ingredients:

2 kg of pork ½ cup brown sugar 1/4 cup salt 1 tbsp coriander seeds 4 cups apple cider vinegar

Sweet, sour, salty and worth of salivating, this simple pork marinade brings out the inherent sweetness of the cut of meat, while elevating the flavour to lip-smacking results. Boil a cup of water mixed with sugar and salt on high heat and then reduce and simmer until dissolved. Add in about 4 cups of apple cider vinegar and cool. For the perfect pork marinade, toss in the remaining ingredients and marinate the pork overnight before grilling.

Pepper Lamb Marinade

Ingredients:

500g lamb 1 tsp powdered turmeric 1 green chilli, chopped 1 tsp black pepper 2 diced onions 1 tbsp of garlic paste 1 clove 1 small cinnamon stick 1 Tbsp clarified butter 1 cup yoghurt Salt to taste

Tender, juicy and packed with a punch, this marinade recipe is perfect for an evening of lamb chops of kebabs. Simply mix all the ingredients together into a thick paste, and marinate the lamb overnight.
