Stuffed Chicken with Bacon, Onion & Rice Stuffing

Festive cooking without the festive panic. A whole chicken stuffed full of crisped bacon, slow-caramelised onions and herbed rice that drinks up the bird's juices as it roasts. We do the prep — cleaning, stuffing, trussing, seasoning — you do the easy bit: a couple of hours in the oven and a rest before carving.
