The deli classic done properly. We use a coarser pork grind than industrial brands, season with paprika, garlic, white pepper and mustard seed, then smoke gently over hardwood until the flavour is mellow and rounded. Skinless and ready in minutes.
Cook them up in a soft potato bun with crisp onions and yellow mustard, slice into split pea soup, or just eat them straight from the pan with a side of pickles.
