This one has a bit of swagger. A whole chicken, glazed in a fermented gochujang lacquer that's sweet, deep, and properly fiery — balanced with garlic, soy, ginger and a whisper of honey. We slow-roast it until the skin is sticky and burnished and the meat pulls clean off the bone.
Bring it to the table whole — it's a centrepiece that doesn't need much else. Steamed rice, kimchi, sliced cucumber, done.
